Fundamentals of Wine and Wine Business


This course offers basic knowledge in wine fundamentals, the world’s wine regions and their climatic and biologic prerequisites as well as quality evaluation in theory and practice of wines from all important wine regions. Wine analysis, business and marketing as well as cultural aspects in historical and contemporaneous perspectives are studied.

The course is divided into two sub-courses:
  • Red Wine Fundamentals
  • White Wine Fundamentals with Champagne, Sparkling Wine, Fortified Wines (Port, Madeira & Sherry)
The course includes:
  • Wine Geography with Climatic and Biologic Prerequisites
  • Vitification and Vinification Techniques, Storage and Ecological Growth
  • Grapes (Species and Varieties) and Wine Styles
  • Legal aspects and appellation regulations
  • Defects, wine faults and wine chemistry
  • Wine Terminology (Appearance and Colour, Taste and Aroma)
  • Tasting, Quality Assessment and Grading of Wine
  • Wine Business (Finance & Economics, Planning and Management)
  • Wine Marketing (Product Design, Marketing Principles, Logistics, Pricing, Sales and Brand Management)
  • Wine Business Activities (Retail, Wholesale and HORECA)
  • Cultural History of Wine and Wine-producing Countries
  • Other Cultural Aspects: Wine as Beverage (Selection in Combination with Food)
  • Project Work
After successful examination the student should be able to break down his/her theoretical knowledge of verbalizing and analyzing aroma, taste and defects as well as wine geography into reasonably accurate practical quality assessment of wines from different regions and of different styles. Furthermore, the student will understand major parameters and various activities associated with wine business.


Each sub-cours is divided into lectures and laboratory work with practical tasting, quality assessment and grading.

Admission requirements


General eligibility + the equivalent of English course B in Swedish secondary school.
